- 1 cup rice flour
- 1/2 cup potato starch
- 1/4 cup tapioca flour
- 2 tsp baking powder
- 1 tsp salt
- 1/4 cup oil
- 2 mashed bananas
- 1 1/2 cups buttermilk (or 1 1/2of milk + 1 1/2 tsp lemon juice. Allow that to rest for Half an hour before using)
- 1 tsp honey
- maple syrup to serve with
- fresh berries to serve with
Instructions
- Add many of the ingredients with a large bowl. Gently whisk together just until they’re combined. Don’t overmix the batter.
- If the batter feels too thick, stream inside a little milk to loosen up. The batter should fall asleep a spoon slowly but steadily.
- Pour about 1/4 cup of batter (or higher, according to your waffle maker’s size) per waffle mold. Cook the waffles prior to the waffle maker indicates they’re ready or until they’re golden brown.
- Serve with maple syrup and fresh berries.
